A rich and hearty soup loaded with chicken, beans, pasta, fresh vegetables, and herbs
Add olive oil to a large dutch oven over medium-high heat. When oil begins to bubble add in celery, onions, and carrots. Saute for 5 minutes. Add in garlic and saute for another 30 seconds. Pour in tomatoes, then stock. Add paste, herbs, and cannellini beans. Cover and let simmer over medium-low heat for about 20 minutes. Add in chicken, zucchini, green beans, and pasta. Let simmer for 15- 20 minutes more. Sprinkle with grated parmesan and fresh parsley before serving.
