Chicken Minestrone Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 cup onions diced
  • 1/2 cup carrots diced
  • 1/2 cup celery diced
  • 2 cloves garlic minced
  • 1 14 oz can diced tomatoes
  • 5 cups vegetable or chicken stock
  • 1 6 oz can tomato paste
  • 1 15.5 oz can cannellini beans drained and rinsed
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1/2 teaspoon basil
  • 1/2 cup frozen green beans
  • 1 zucchini peeled and diced
  • 1 cup cooked and shredded chicken
  • 1/2 cup Ditalini pasta
  • 1/2 cup grated parmesan optional for serving
  • 1 teaspoon parsley chopped
  • salt and pepper to taste

Instructions

  1. Add olive oil to a large dutch oven over medium-high heat. When oil begins to bubble add in celery, onions, and carrots. Saute for 5 minutes. Add in garlic and saute for another 30 seconds. Pour in tomatoes, then stock. Add paste, herbs, and cannellini beans. Cover and let simmer over medium-low heat for about 20 minutes. Add in chicken, zucchini, green beans, and pasta. Let simmer for 15- 20 minutes more. Sprinkle with grated parmesan and fresh parsley before serving.
