Preheat oven to 325. Grease and flour bundt cake pan. Set aside. Combine oil, eggs, and sugar in a large mixing bowl. Whisk together until smooth. Combine flour, 1 tsp of cinnamon, and baking soda in a medium bowl. Add dry ingredients to wet whisking as you do so. Fold in apples, salt, and vanilla. Pour into pan. Sprinkle the remaining 1 tsp of cinnamon over cake batter. Bake for 1 hour or until a toothpick inserted comes out clean. Meanwhile, combine butter, sugar, and half and a half in a medium saucepan. Cook over low heat until sugar dissolves. Let cool for 5 minutes and then whisk in the powdered sugar. Pour glaze over cool cake. Sprinkle with nuts before frosting sets.
