Ingredients
1/2cupuncooked rice
1 1/2tspmayo
3/4cupcream of coconut
1 1/2tspsour cream
1 1/2tspworchestire sauce
2tbspcantaloupepeeled and diced
1tbspfresh parsleychopped
1/4cupraisins
1/2cupshredded carrots
1/4cuppineapple
2cupscooked chickendiced
Instructions
Cook rice according to package instructions. Drain any excess liquid and allow to cool. In a large mixing bowl, combine mayonnaise, sour cream, cream of coconut (or substitute) and Worcestershire sauce. Mix well. Stir in rice. Add remaining ingredients and mix until combined. Cover and refrigerate for at least 2 hours before serving. Serve in chilled cantaloupe halves or over a bed of lettuce.
