Spiked Strawberry Lemonade

A refreshing cocktail infused with sweet strawberries and tart lemon.

Hello, sweet friends!

This gal couldn’t be more excited that strawberry season is FINALLY here!

I feel like it’s been FOREVER since we enjoyed those fresh, sweet berries, but in truth it really hasn’t been that long!

In fact we were enjoying fresh (frozen) berries from our local berry batch all throughout the winter months.

That’s because when strawberry season comes around I freeze as many as I can, so I can use them for sweet treats, jams, and this delicious puree that I use all year long!

I LOVE to put this super simple puree over waffles or pancakes. And it’s super delicious in smoothies and even a few favorite cocktails.

In fact, it’s the ‘STAR’ ingredient of today’s recipe for Spiked Strawberry Lemonade!

You will also need a few more things. Like lemons, sugar, more strawberries, and oh yes, did I mention booze? Ya that’s the ‘spiked’ part.

Can I make this non-alcoholic?

Absolutely! In fact I’ll be getting to that in a sec but that’s how we usually serve it.

So how are these “Spiked” Strawberry Lemonade cocktails made?

I’m so glad you asked! First, we start with that delicious strawberry puree I mentioned. It’s just two ingredients! Strawberries and a wee bit of water! That’s it. And all you need to do is put it in a blender or food processor and blend until it’s smooth!

Now I’m a huge fan of strawberries, as I said. But they do have a LOT of seeds, and no matter how much you blend them up, those seeds will still be there. Most folks prefer not having any seeds in their cocktail so I would recommend pushing the puree through a sieve to remove as many of those seeds as possible.

TIP: I usually mix the puree (seeds and all) into the fresh lemonade and let it sit for a while. I think this adds so much more flavor and then right before serving I pour it through a sieve.

 

Did I mention this cocktail has ‘fresh’ lemonade? It does. Which is also simple to make and has just three ingredients as well. Lemon, sugar, & water. That’s it.

And if you prefer a non-alcohol strawberry lemonade…well, just mix the puree and fresh lemonade together-add some ice and you’re done!

But if it’s cocktail hour wherever you are and you want to imbibe than by all means add in a shot of your favorite vodka! Oh, but before you do spoon just a little more of that fresh puree (seedless of course) into the bottom of your glass first! This step is totally optional but that ‘extra’ boost of strawberry brings this cocktail OVER THE TOP!

TIP: You could also add the vodka to the pitcher of strawberry lemonade before serving, but I prefer to have folks add their own. P.S. (Please drink responsibly).

Then add some ice, a berry or two (if you like), and decorate your cocktail all pretty like with some lemon wedges and a slice of strawberry!

Oh my goodness friends this cocktail with or without the booze is SO delicious and refreshing on a hot summer day! Heck, who am I kidding? It’s refreshing every day!

And did I mention it’s delicious?

It’s the perfect combination of sweet and tart.

Spiked Strawberry Lemonade

A refreshing summer cocktail with fresh strawberry puree, lemonade, and vodka.

Ingredients

Strawberry Puree

  • 4 cups fresh strawberries or frozen (thawed)
  • 1/2 cup water

Lemonade

  • 1 cup freshly squeezed lemon juice
  • 2/3 cup sugar
  • 4-6 cups water

To Make Cocktail

  • vodka
  • strawberries sliced
  • lemon wedges

Instructions

  1. Combine strawberries, sugar, and water in a food processor or blender. Blend until smooth. Strain puree through a sieve to remove pulp bits and seeds. Set aside. Meanwhile, combine the lemon juice, sugar, and water in a large pitcher. Stir 2 cups of the strawberry puree into the lemonade. Reserve the remaining puree to place in glasses when ready to serve.

    To Mix Cocktail. Place a Tablespoon of Strawberry puree into the bottom of a cocktail glass. Add one shot of vodka. Add ice and then fill the glass with strawberry lemonade. Serve with lemon wedges and slices of strawberry.

    This sounds amazing!!! That’s a great idea to freeze the fresh strawberries so you have them year round. I buy them from the grocery store in the winter and they’re just not the same.
