Shrimp Egg Roll in a Bowl!

With plenty of fresh veggies, plump shrimp, and a sweet and spicy sauce this egg roll in a bowl will make a delicious and healthy meal and it’s one pan too!

Now I know you baking lovers are probably asking, ‘Where the heck is your usual pie, cake, or crisp?’ ‘And how about those cinnamon rolls, bars, and cookies?’ Yes, I know. I love baked goods too, which is why I post a LOT of those recipes. But, since Michael and I are trying to eat healthier, I decided to change it up once in a while. Now that’s not to say I won’t be sharing sweet treats anymore.

Oh heavens NO! I will. But from time to time, I’m also going to share some healthy (ish) recipes, like today’s recipe!

You all know how much I LOVE egg rolls!!! (You can find my favorite recipe for Pork Egg Rolls here) and today I’m sharing another favorite egg roll!

Only this time it’s not in a wrap, it’s actually in a BOWL!

And guess what that means?

If you guessed fewer calories and carbs you got it right!

But don’t worry. There definitely isn’t less taste! I promise!

So let’s get started whipping up a batch!

First, we need to chop up some fresh veggies and garlic. I like a yellow onion (you can also use red or even sweet) and celery. You could even add fresh mushrooms if you wanted.

You’ll also need a bag of coleslaw mix! (You could definitely shred up your own cabbage and carrots but this is SO much easier and a time saver!)

 

Once your veggies are ready it’s time to mix up the sauce. I use soy sauce (low sodium), rice vinegar, sesame oil, and fresh ginger! (You could also use ground). Then I add in a special ingredient, which is totally optional but I think it adds SO much flavor. It’s sweet chili sauce. (I buy mine at Trader’s Joe). You could also add in siracha if you want a little heat.

TIP: This dish cooks up pretty fast so I like to have all of my ingredients ready to go!

That includes the protein in this dish. I’m using cooked shrimp (medium) but you could also use chicken, ground turkey, and pork.

After the celery and onion have sauteed for about 5 minutes, I add in the garlic for about 30 seconds more. Then I add in the coleslaw mix. This takes just a few minutes to wilt down and once it has I pour in the sauce.

 

 

Last but certainly not least, I add in the shrimp. Since the shrimp is already cooked it just needs a minute or two to heat through!  Then I just sprinkle a bit of salt and pepper to taste, along with some chopped green onion!

 

And VIOLA!  You have a delicious AND healthy meal of Shrimp Egg Roll in a Bowl!

Shrimp Egg Roll in a Bowl

Plump juicy shrimp tucked in a bed of fresh veggies and sweet and spicy sauce!

Ingredients

  • 12 oz cooked shrimp (medium)
  • 14 oz coleslaw mix
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 2 cloves garlic minced
  • 2 Tablespoons olive oil

Sauce

  • 1/4 cup soy sauce low sodium
  • 1 Tablespoon sesame oil
  • 1 Tablespoon rice vinegar
  • 2 Tablespoons fresh ginger grated
  • 1 Tablespoon sweet chili sauce
  • 1 Tablespoon lime juice
  • 1/4 tsp black pepper
  • 1/8 tsp salt
  • 4 green onion chopped

Instructions

  1. Stir together sauce ingredients. Set aside. Add olive oil to a large saute pan. When hot add in celery and onion. Saute for 3-4 minutes. Add in garlic. Saute for 30 seconds. Add coleslaw mix and saute until it begins to wilt down (2 mins). Pour in sauce. Cook for 3-4 minutes. Add in the cooked shrimp and cook for 2-3 minutes or until shrimp is warmed through. Remove from the heat and add salt, pepper, and green onions. Serve immediately with fresh cilantro and siracha. (Optional)

Recipe Notes

I LOVE this recipe because it is perfect for the two of us for a light dinner and we always have leftovers for the next day’s lunch!

You can also make this egg roll in a bowl ahead of time, but because the shrimp is already cooked I would add them in when you’re ready to eat. Otherwise, they will get overcooked and no one likes overcooked shrimp! Am I right?

  2. This sounds delicious!! I’m not a huge fan of shrimp, but my hubby is. I could always leave the shrimp out of mine. I love egg rolls, too!

  3. Thank you so much, Michelle! And yes, you could leave the shrimp out or substitute ground pork, chicken, or even beef! I’m a huge fan of egg rolls too which is why I’m obsessed with trying different variations of this dish!
