Oatmeal-Raisin Scones with Cinnamon Glaze!

For those of you who follow along, you might have been witness to my ‘mini’ breakdown this past Monday.  It’s never easy watching a loved one suffer, but I think it’s even more heartbreaking if that loved one is your parent.

The truth is-I think many of us go through life believing our parents are invincible.  I know I did.  After all, mom has always been strong and, for the most part, healthy.  The only surgery she’s ever had was for cataracts, and she came through that without a hitch!  But this time was different.  This time mom endured a great deal of pain, complications from the prescribed medications, along with severe depression. Although the doctors stated these were ‘normal’ symptoms of recovery-it was far from normal for those of us who know and love her so much.

But it is truly amazing what one week and a WHOLE lot of prayers can do.  By Wednesday of last week, mom was up and about, and feeling much better.  On Friday, she went in for her post-op checkup, and the doctors removed the stitches from her nose and were very pleased with how quickly she is healing.  Seeing the relief in mom’s eyes at their positive prognosis, truly warmed my heart.  But it was when she started to tease the doctors knew without a doubt my mom was on the road to a full recovery.  I guess the doctors did too-because they gave her the green light to return home as long as she continued to follow the same guidelines they gave to me.

During mom’s stay these past weeks, (when she felt up to it), mom and I would always have a cup of coffee and a little ‘sweet’ treat, in the morning, before we began the long list of instructions for her care. We would sit and chat about the past and the present, and what we hoped the future would bring.

One of mom’s favorite sweet treat’s during these long visits were these flaky-buttery Oatmeal-Raisin Scones. You all know how much I LOVE breakfast-right?  Well, who do you suppose I got that from?  Yep-it’s mom!

When she took the first bite-she said it reminded her of a favorite breakfast treat-a warm bowl of oatmeal-sprinkled with cinnamon.  I’m not sure if these YUMMY scones will replace her usual oatmeal every morning but she did ask for the recipe and of course, a ‘few’ to take home with her.

Mom (and her dog, Libby)  went home Friday evening.  We chatted over the phone several times this past weekend, and yesterday she mentioned she might even whip up a batch of my Oatmeal-Raisin Scones.  That is unless I was planning a visit out to the farm-in which case could I bring some for afternoon coffee?

It sure is good to have mom back!

Here is the recipe for my Oatmeal-Raisin Scones!  I hope you enjoy them as much as Mom and I do!

Oatmeal-Raisin Scones with Cinnamon Glaze

A buttery-flaky scone filled with plump raisins and covered in a spice-filled glaze

Course Breakfast

Ingredients

Scones

  • 1 1/2 cups all purpose flour
  • 1/4 cup white sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups old fashioned rolled oatmeal
  • 1/2 cup raisins
  • 1 large egg
  • 10 tbsp melted (unsalted) butter
  • 1/3 cup milk

Glaze

  • 1 cup confectioners sugar
  • 1 tbsp half and half
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon

Instructions

  1. Preheat oven to 450.

    Combine flour, sugar, baking powder, and salt. Stir in oatmeal and raisins. Add egg, melted butter, and milk. Stir until moistened. (Do not over stir).

    Transfer dough to a generously floured surface. Form into an 8"x 3/4" circle (moving dough constantly). Cut into 8 wedges. Place the wedges a 1/2" apart on an un-greased 9x13 baking sheet. Bake for 10 minutes, or until lightly brown.

    Meanwhile: Beat confectioner's sugar, half and half, vanilla and cinnamon in a medium mixing bowl. Ice scones with glaze and sprinkle on oatmeal. (optional) Serve warm.

    This recipe is unusual, as it calls for melted butter, instead of cold butter. The dough will be sticky. Keep dough moving to keep it from sticking to a floured surface. I use a spatula to lift it onto baking sheet.

  1. Yum! These look delicious. I’d have scones everyday for breakfast if my waistline would allow it. So glad to hear your mom’s doing better. It’s so hard seeing your parents suffer. I’m sure your scones were good medicine for her soul. 😉
