Fabulous Fruit Pizza!
A quick and easy oh-so-yummy way to serve up summer fruit!

Hello, friends!
Summer is finally here and I’m over the moon happy for many reasons! But one of the main reasons is the PLETHORA of fresh fruit at our local berry farm and farmers’ markets!
There is absolutely NOTHING more that I love than grabbing a bucket and going out to the strawberry patch and picking those juicy plump berries right off the vine! Our local patch also has fresh raspberries picked daily so I NEVER leave the lot without grabbing a few quarts of those too!
I usually freeze as many as I can so we have some all year long. But of course, I also like to use them in a lot of my baking too!
Like in this SCRUMPTIOUS fruit pizza I recently whipped up for Sunday brunch!
I recently updated the recipe to reflect the homemade cookie crust that I used in my Mini Fruit Pizzas. 

 

I tweaked the recipe a bit and omitted the sour cream in the crust. Because I was trying to go a bit more on the ‘lighter’ side. But everything else is pretty much the same except I cut the recipe in half to create a 12″ crust instead of cookies.

 

And that creamy oh so dreamy frosting? Well, I changed that a wee bit too. I kept the cream cheese and yogurt base. But I decided to use Vanilla Greek yogurt instead of the plain and omitted the extra sugar and vanilla.

But you’ll never miss it because there is plenty of natural sugar in all that fruit!

Speaking of fruit. There are seriously no rules or limits on what kind you can use. This time of year I like to go with the berry trio of strawberries, raspberries, and blueberries. (Perfect for Fourth of July picnics!) And then I’ll usually add whatever else I have on hand. Like fresh pineapple, kiwi, and mango.
Later in the summer I switch things up and use peaches, pears, cherries, and blackberries. The options are limitless really.
This is why I love this recipe so much! It’s easy. It’s versatile and it’s SO delish your family will gobble it up and ask for more!
PREP & BAKING EQUIPMENT:
Mixing Bowl
Spatula
Stand Mixer
Here are the ingredients you’ll need:
CRUST:
Flour
Sugar
Egg
Butter
Baking Powder
Vanilla Salt
FROSTING:
Cream cheese
Vanilla Yogurt
FRUIT:
Whatever is on hand. (Strawberries, blueberries, raspberries, kiwi, pineapple, pears, peaches, cherries, blackberries)
how to make fruit pizza:

PREPARE THE CRUST:

Combine the flour, baking powder, sugar, and salt in a large mixing bowl. Cut in the butter until the mixture is crumbly. Add in the egg and vanilla. Mix until dough begins to form.

Spread the dough out on a greased 12″ pizza pan. Bake in the oven for 12-14 minutes at 350°. Remove from the oven and set on a baking rack. Allow the crust to cool completely.

PREPARE THE FROSTING:

Beat together softened cream cheese and vanilla yogurt until light and fluffy. Set aside.

PREPARE THE FRUIT:
Rinse fruit well. Drain. Cut fruit into bite-sized pieces.
ASSEMBLY: 
Spoon the frosting over the top of the crust and spread evenly.
Add fruit.
Chill until ready to serve!

Ingredients

Crust

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 cup white sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup butter

Frosting

  • 4 oz softened cream cheese
  • 6 oz Vanilla Greek Yogurt

Fruit

Instructions

  1. Preheat the oven to 350. Combine flour, sugar, baking powder, and salt in a large mixing bowl. Cut in butter. Add egg and vanilla. Mix until combined. Spread dough out on a greased 12" pizza pan. Bake for 12-14 minutes or until the crust is golden brown. Remove the crust from the oven and allow it to cool completely.

  2. Combine the cream cheese and yogurt in a large mixing bowl. Beat until mixture is light and fluffy and lump-free. Set aside.

  3. Wash fruit well. Cut into bite-sized pieces

  4. Spoon the frosting over the crust and spread out evenly.

  5. Arrange the fruit

As I mentioned this recipe is super versatile and you can use any combination of fruit you wish! Mix it up.

For a patriotic spin just use raspberries or strawberries and blueberries. Or for a summer party top with kiwi and pineapple and peaches!

Regardless of what fruit you put on this pizza, I guarantee one thing. It won’t last long.

It never does in our house anyway! In fact, I don’t remember ever having to worry about storing it. But if you are here are my tips!

 

  • Keep in mind the crust and the fruit will get a bit soggy past that time frame. So don’t store the pizza any longer than 2-3 days.
  • I like to cut mine into pieces and lay them flat in an air-tight container.

**You could also make the crust up and bake it. Then freeze until ready to assemble.

  1. This sounds amazing!! My granny used to fix one similar but she used refrigerated sugar cookie dough. It was good but I can’t have all that sugar now. I’ll definitely be trying your homemade crust! And how fun that you can pick the berries yourself!! That makes it all worth it.

  2. Thank you so much, Michelle! When Melissa was little I used to make the pizza with store-bought cookie dough too! It was SO easy and well, yes, we didn’t worry so much about sugar, LOL! I hope you enjoy the recipe! It’s became a brunch staple around our house!
