Creamy Chicken Salad

A Creamy Summer Salad filled with fresh veggies and chunks of chicken!

Hello, sweet friends!

Today I’m sharing a quick and easy salad that I’ve been making for quite a few years now. It’s definitely become one of our go-to salads in the summer because we generally have all of the ingredients on hand and it takes about ten minutes to make!

And if you’re eating a bit lighter this summer like me, you can cut down on the fat by using a lighter version of mayo or yogurt for the dressing.

Either way, this Chicken salad is SUPER creamy and is filled with big chunks of chicken, celery, grapes, and toasted almonds!

YUM!

So here’s how I put it all together.

First the chicken.

Last night I made juicy bone-in chicken breasts for dinner, and instead of our usual two, I grilled up four of them so I could have plenty of leftovers for this salad!

Since it’s already cooked all I had to do was cut it up into nice, bite-sized chunks.

Then I added in a cup each (give or take) of celery and grapes.

I love adding almonds to this salad for a little extra crunch and I think toasting them in a dry pan before adding them to the salad gives them SO much more flavor!

The dressing is easy too- just two ingredients. Light mayo and lemon juice.

 

This Chicken Salad is perfect over a bed of lettuce with just a sprinkle of salt and pepper.

 

But there is nothing quite like piling it on homemade bread for a DELICIOUS summer sandwich!

Every single bite is filled with those big chunks of chicken, grapes, and celery and my favorite…those crunchy almonds!

The best part about this salad is it is SO versatile. If you don’t have grapes, add cranberries for a little tartness! And I LOVE fresh tarragon in this salad whenever I have it on hand!

Chicken Salad

A creamy summer salad filled with chicken, grapes, celery and almonds and a light lemon dressing.

Ingredients

  • 2 cups cooked chicken cut into bite-size pieces
  • 1 cup chopped celery
  • 1 cup seedless grapes
  • 1/2 cup toasted almonds
  • 1 1/4 cup light mayonnaise
  • 1 Tablespoon lemon juice
  • salt and pepper to taste

Instructions

  1. Combine chicken, grapes, and celery into a medium bowl. Place almonds in a dry non-stick pan. Turn heat to medium. Stir almonds constantly until they become light golden brown. Remove from heat and let cool. Add almonds to the mix. Combine mayo and lemon juice in a small mixing bowl. Whisk until smooth. Pour over salad. Stir until everything is coated. Sprinkle with salt and pepper. Refrigerate until ready to serve.

  1. That looks amazing and love the simple amount of ingredients. The bread though, homemade… sounds fantastic! I’ve really backed off carbs but sometimes I treat myself and something like this is perfect. Great for summer too because it’s so easy!

  2. I hear you on the carbs, Carole! The bread is actually for the hubby who I swear could eat an entire loaf and never gain a pound! Not me! But you’re so right! This salad has simple ingredients and it’s SUPER easy to make which is perfect when the weather gets hot and the humidity starts to rise! No one wants to be spending too much time in the kitchen then, right?
