Broccoli has never been a vegetable my family cared much for.
You can bet that whenever I would put out a platter of fresh veggies with their favorite dip, broccoli would always be the only remaining veggie left.
I would try to roast it, put it in casseroles, and even their favorite Italian Pasta Salad, and they still wouldn’t eat it.
And then one day a friend of mine at work brought a dish to pass for our company potluck.
Guess what the main ingredient was?
You got it.
I’ll be honest, I’ve never been a fan of the stuff either, but it’s supposed to be good for you, so I usually tried to choke down a few pieces whenever it was served.
But not this time.
This time I could seriously have eaten the whole darn bowl of broccoli
Because that salad didn’t just have broccoli. It also had thinly sliced red onion, plump juicy raisins, and slightly salty almonds too.
And best of all?
It was covered in this delicious sweet and creamy dressing!!!
I definitely wasn’t the only one going gaga over my friend’s salad either!
Within minutes of setting the dish out, the salad was gone!
I’ll tell you, friends, that salad gave me hope!
I was certain that when I made it for our family’s next get together, the entire bowl would be gone too -broccoli included!
Sadly, I was wrong.
It actually took several family gatherings before anyone even tried the salad.
Yes, that’s how much they disliked broccoli.
But not anymore.
I can proudly say that my entire family has converted to being broccoli loving people-and it is all thanks to this YUMMY salad!
Oh yes, and did I mention you can crumble a whole bunch of crispy bacon over the top too?
Yes, yes you can.
And you can change up the raisins to dried cranberries if you want a bit of tartness.
You can also add in sunflower seeds, poppy seeds, and walnuts instead of almonds.
Do you see where I’m going here?
That’s right. You can turn put whatever your heart desires in this old salad and it’s still going to be the BEST salad you will ever eat!
I promise you that!
I’ve got proof!
Because now when I make this salad I am the proud owner of an empty bowl when the meal is done!
Here’s the recipe!!!
A salad filled with crisp broccoli, red onion, almonds and raisins-covered with a sweet tangy dressing.
Prep Time 20 minutes
Total Time 20 minutes
about 2 medium bunches
slices of bacon
cooked and crumbled
apple cider vinegar
In a large mixing bowl combine broccoli, raisins, almonds and red onion. Set aside. Fry bacon in a medium fry pan until crisp. Place on a paper towel lined plate. Let cool. Meanwhile, combine dressing ingredients in a small mixing bowl. Whisk together until smooth. Pour dressing over broccoli salad. Mix thoroughly. Crumble bacon and sprinkle over the top of salad. Serve chilled.
This salad is perfect for family gatherings, picnics, company potlucks or lunch served with a big slice of crusty bread!
