Oh my goodness, sweet friends! I can hardly contain my excitement!

APPLE SEASON IS FINALLY HERE!!

My apologies for yelling but I’m seriously so happy! Reeealllyyy Really Happy!!

Because apple season means fall. Which brings cooler temps and cooler temps mean I get into a TOTAL baking frenzy!!

It’s true! There is something about fall that just makes me want to put on my apron and bake every recipe in sight!

Especially recipes that involve apples.  Apple Pie. Apple Crisp. Apple Butter. Applesauce.

Oh yes, and of course one of my favorites!

Apple Cake!

But not just any ole’ apple cake.

This Apple Cake is not only filled with sweet apples and spicy cinnamon but it also is drizzled with a creamy, brown sugar glaze!

And to add that extra something Somethin. I sprinkle some chopped nuts over the top and let them fall where they may!

But there is one more reason why this cake is SO extra special!

It’s because of how MOIST it is!

Just an FYI! This cake is may not be for anyone who is trying to watch their fat intake! You see that’s the reason this cake is so moist!  The ingredient list includes vegetable (or canola oil) and THREE eggs!

Of course, this cake also has apples. And doesn’t the saying go, “An apple a day keeps the Dr. away?” Well, this actually calls for THREE apples so that should keep the Dr. away for quite some time, right?

I mean what could be so bad about a cake that looks so SCRUMPTIOUS and it hasn’t even been baked yet?

But you do bake it.

And then it looks like this.

Until you drizzle it with that brown sugar glaze and sprinkle all those nuts on top. Then it looks like this!

Every slice is SUPER moist and filled with chunks of apple and just a hint of cinnamon. And then that sweet buttery drizzle catches your tongue and BAM!

That slice of cake is gone!

I guarantee it!

Apple Cake with Brown Sugar Glaze

Ingredients

Cake

  • 1 1/2 cups vegetable oil
  • 3 eggs
  • 2 cups white sugar
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla
  • 3 cups diced apples
  • 2 tsp cinnamon divided
  • 1 cup chopped nuts almonds, walnuts,

Brown Sugar Glaze

  • 1/4 cup butter
  • 1 cup brown sugar
  • 1/2 cup half and half
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 325. Grease and flour bundt cake pan. Set aside. Combine oil, eggs, and sugar in a large mixing bowl. Whisk together until smooth. Combine flour, 1 tsp of cinnamon, and baking soda in a medium bowl. Add dry ingredients to wet whisking as you do so. Fold in apples, salt, and vanilla. Pour into pan. Sprinkle the remaining 1 tsp of cinnamon over cake batter. Bake for 1 hour or until a toothpick inserted comes out clean. Meanwhile, combine butter, sugar, and half and a half in a medium saucepan. Cook over low heat until sugar dissolves. Let cool for 5 minutes and then whisk in the powdered sugar. Pour glaze over cool cake. Sprinkle with nuts before frosting sets.

What apples are the best for baking?

There are SO many varieties of apples out there that this has become a difficult question to answer. My personal favorites are Jonathan, McIntosh, and Cortlands. All three are sweet and softer than most apples so they bake down well. Many varieties are being crossbred with others now, so their names could be different depending on the orchard you go to.

  1. Christine, your baked goods always look so amazing. A tiny house bakery would be perfect for you! There is a couple where I live that opened up one on their property and it’s an honor system. She does really well with it and there’s only 5,000 peeps in out county. Anyways , to your cake and apples. I grew up in the NW so I know all about apple season. Some funny stories with my grandma and apples as well but I won’t bore you with that. Your cake looks amazing – Pinned!

  5. Hello, Alice! I have never tried baking it in a loaf pan before. If you do try it, my only advice would be to split the batter up between two loaf pans. As it is a pretty dense cake and if it doesn’t have room to bake it might burn on the top and not be done in the middle. I’d love to know how it turns out! Thank you so much for stopping by!
