Today has been one of those ‘lazy’ kind of days! Hubby and I didn’t even make a big brunch this morning. Instead we whipped up a batch of scrambled eggs with some veggies, and called it good. (It was okay.)
Morning soon turned into afternoon, and our energy level’s had seemed to deplete even further. (It takes a lot of energy to click that remote control you know!) So, I decided maybe a healthy snack was called for.
Since I had some leftover veggies, I decided to make a veggie pizza. When I advised hubby of this-he merely rolled his eyes. You got it! Hubby is not a ‘veggie’ pizza kind of guy. When it comes to pizza-his requirements are- ‘heavy’ on the cheese and meat, and hold the veggies, please!
But, since he wasn’t getting out of his recliner to fix something else- veggie pizza is what he got!
Now, tell me please- who wouldn’t love to have a slice of this right now? (This tasty snack is something even the pickiest of kids will eat- TRUST ME- I know!)
Here is what you’ll need:
1 tube of crescent rolls
4 oz cream cheese (at room temperature)
1/4 cup sour cream
1 tablespoon fresh dill (chopped)
1/2 tsp garlic powder
Your choice of vegetables
Preheat your oven to 375. Grease a 9×13 inch pan. Lay the strips of crescent rolls into the bottom of the pan-crosswise. Press into place, making sure the perforations are sealed. Bake in oven for 13-17 minutes, or until golden brown.
There you have it. My work is done- and hubby loved it so much, there isn’t even any leftover! Speaking of leftovers…..that sounds like a good idea for dinner!
